From Peking to Beijing: The Evolution of a World-Famous Dish

The dish known as "Peking Duck" has been a staple of Chinese cuisine for centuries, and its origins can be traced back to the imperial capital of Beijing. However, the name itself is not as old as one might think. In fact, it was only in the early 20th century that this beloved dish began to be referred to by its current English name.

The story of how "Peking Duck" came to be known by this name begins with the arrival of foreign diplomats and travelers in China during the late Qing dynasty. At this time, foreigners were largely unfamiliar with Chinese cuisine beyond what they had encountered in their own countries. As a result, many dishes were given new names based on their perceived similarities or associations with European or American dishes.

One such example is "Peking Duck." This dish originated in Beijing over 800 years ago during the Jin Dynasty (1115-1234), when ducks were raised on special feed and then roasted over an open flame until crispy-skinned but still juicy inside. The resulting meat was served with pancakes made from wheat flour, scallions, and hoisin sauce - all ingredients readily available at local markets.

However, when foreigners first encountered this dish in China's capital city during the early 20th century, they did not recognize it under its original name: "Beijing Kao Ya". Instead they named it after their perception that it resembled duck cooked à la Parisian fashion (à la dindon) - hence "Peking Duck".

Over time however ,the term 'Peking' became synonymous with anything related to Beijing or even China itself , which led some people who are more aware about cultural sensitivity started using 'Beijing Roast Duck' instead .In recent years ,some restaurants have also adopted different variations like 'Shanghai Smoked Duck', reflecting regional specialties within mainland China .

Despite these changes though ,the essence remains unchanged .The artistry involved in cooking Peking duck has become part of Chinese culinary tradition : It requires precise control over temperature & timing while roasting so that skin becomes crispy yet meat stays tender .It's no wonder why chefs worldwide strive for mastery in preparing this iconic dish.

This unique blend of flavors & presentation has also contributed significantly towards popularizing Chinese food globally .When international visitors come across advertisements touting exotic delicacies from far-off lands ,they often associate them directly with ancient history & mystique associated with places like Xanadu or Great Wall - where once upon a time lived emperors who indulged themselves into exquisite feasts

And thus we see how Peking duck became an integral part not just any ordinary meal but symbolizes rich historical heritage intertwined beautifully within modern-day culture – an epitome example among numerous other fascinating stories woven together within China’s vast tapestry
